Lentil Chili and Thoughts on Chopping Vegetables

Making lentil chili. One of the things I always find rather time consuming is chopping vegetables. Like I see recipes that are just like--take a few minutes to chop these vegetables and I'm just 'haha a few minutes?' because that part has *never* gone quickly for me. I just don't trust my dexterity like that.
