Jan. 25th, 2025 01:48 amWhile I will look at a lot of different recipes for inspiration, I think it's important to be careful about substitutions. A lot of times I've seen a recipe online where someone asks if they can substitute one or more of the core ingredients.
Now usually they can, but at that point what they should be doing is looking for a different recipe altogether. Because different foods prepare and cook differently. So it's a lot better to use a recipe that actually uses the ingredient they want to sub. If they cannot find such a recipe on the internet, that probably means that either 1) they need a more thorough search technique or 2) that's really not a suitable substitution and they should reconsider how they plan to adapt the original recipe.
For example, since I am a vegan who also needs to eat gluten free, I often cannot use the conventional recipe for a food. What I don't do is expect is to be able to make a simple substitution into a recipe where the original centers meat and wheat. No. Instead I find a recipe by someone who has already made the necessary substitutions. Preferably more than one so I can get a better idea of what's likely to work (since some people...make bad recipes).

Recently made granola and popcorn for quick snacks.
I like to buy a big bag of popcorn kernels and cook popcorn in a covered pot. I feel it reduces waste compared to buying single serving popcorn packages for the microwave and since the kernels are usually plain, makes it easier to choose how to flavor the popcorn. There are situations where convenience is the most important factor, but if the extra effort is reasonable I find it well worth doing. Though if convienience is the most important factor, pre-popped popcorn may be a better choice than microwave popcorn.
Granola takes more time and effort than popcorn but is still fairly straightforward to make from scratch and very rewarding to customize. I use a peanut butter and maple syrup base to stick the oats together, but there are many other ways to do that. And of course many choices for what nuts, seeds, dried fruits, and other additions to add.

Atole is so simple to make, and so delicious. Right now I'm using a recipe that is 1 cup masa harina, 3 cups soy milk, 2 cups water, 1/2 cup maple syrup, 1 tablespoon cinnamon and a cinnamon stick, and 1 tablespoon vanilla. This makes a thicker atole because I like mine to be more of a pudding consistency when it cools. The original recipe I got this from calls for only half a cup of masa harina, which keeps it more like a thick beverage consistency.

While there's such a wide range of green vegetables out there of many different species, cruciferous vegetables are extremely widespread and everything from broccoli to cabbage to brusells sprouts to kale, kolhrabi, and romanesco are actually just different varieties of the same species, brassica oleracea. That's artificial selection for you.
Convenience Tools For Cooking
Jul. 7th, 2024 11:40 pmMicrowave, toaster, and rice cooker are three really important convenience tools for cooking. I didn't have any of these when I was poor, and convinced myself I didn't need them, but they would have helped me so much. These are so important when you need to get a hot meal in you with minimum time and effort. Even if you love cooking there's going to be times you don't have the time or energy for it. If you can't get all three I really recommend getting at least the toaster. Both toaster and microwave will cook you something fast, and both toaster and rice cooker can be used for more than just toast or rice. Getting creative with these tools will give you more options for convenience foods.
Chickpea Flour Omelette and Fries
Jun. 10th, 2024 10:59 pmMade a fancy breakfast with a chickpea flour omelette with mushrooms and fries today and I enjoyed that. Baked fries are one of my favorite things to make with fresh potatoes. And I love chickpea flour omelettes, which I make with chickpea flour, kala nalak (black salt), turmeric, soy milk or oat milk, and water and whatever fillings I like (which, like today, usually includes mushrooms). I can also make pancakes with chickpea flour and it lasts a long time and I can store it in my cupboard, which I like.
Homemade Tacos
Mar. 29th, 2024 03:12 pmRecently made my own corn tortillas with my own TVP faux taco meat. I started making my own tortillas a while back and hugely prefer these to storebought tortillas. The problem is that ever since I storted making my own corn tortillas I've been generally unwilling to go back to storebought ones, but making them requires a certain amount of time and energy from me that I may not always have.
Restaurant tortillas can be good but I don't go to restaurants anymore and though I'm not averse to just getting takeout and reheating stuff delivery services tend to be both extra unethical and expensive and I'd rather not go into a restaurant to order myself.
So another convenience spoiled by vastly superior home cooking, I guess. Anyway, you definitely shouldn't judge corn tortillas by the storebought ones, which are anything from mediocre to absolutely terrible. Anything that isn't cooked fresh (ie homemade or made fresh by a restaurant) is merely a sad imitation of a tortilla. Also if you can make your own homemade tortillas you can make all sorts of different variations with different color corn meal and different spices and bits of different peppers in them and whatnot.

The Satisfaction of Soup
Feb. 10th, 2024 07:45 pmMy potato-corn-bean-squash soup has been very satisfying and delicious for me. I've been enjoying leftovers for this soup. I would definitely be willing to make this again. I used cannelini beans and delicata squash for this batch. If I make this again I might consider trying another type of bean and squash, though I might be selective about which ones I use, since I'd like the result to be similar to this one. I can be picky about which things are combined in my food.
