I feel fortunate that I like broccoli and cruciferous vegetables in general. While there's such a wide range of green vegetables out there of many different species, cruciferous vegetables are extremely widespread and everything from broccoli to cabbage to brusells sprouts to kale, kolhrabi, and romanesco are actually just different varieties of the same species, brassica oleracea. That's artificial selection for you.

From a scientific perspective, there is no such thing as a vegetable. It's a culinary category only.

I've found that I enjoy sauteed eggplant as an addition to salsa, so that's another thing I can do with eggplant. Since I eat a lot more produce now, I like to figure out as many ways to use it as possible. To make eggplant salsa, I just make salsa like I normally do, add the sauteed eggplant when I blend it in the blender, and refrigerate until chilled.
