I made a large batch of salsa today. In addition to the more common ingredients like peppers, tomatoes, onion, garlic, cilantro, lemon juice, and smoked paprika, I also added some eggplant and cucumber. I try to find as many things I can use my vegetables for as I can since I eat so much fresh produce now.
Eggplant Salsa
Jul. 26th, 2021 10:37 pmI've found that I enjoy sauteed eggplant as an addition to salsa, so that's another thing I can do with eggplant. Since I eat a lot more produce now, I like to figure out as many ways to use it as possible. To make eggplant salsa, I just make salsa like I normally do, add the sauteed eggplant when I blend it in the blender, and refrigerate until chilled.
I really love homemade salsa. And while I cook the fresh onions, garlic, and jalapeno in olive oil, I don't cook the rest. This current salsa I've made with the ingredients I've mentioned plus fresh tomatoes, cilantro, and lemon. I really love the combination of flavors from the cooked and raw ingredients. I haven't even been putting spices in it recently because the other flavors work fine for me even with no spices at all, so I may as well save my spices for other foods (especially since the ones I'm inclined to add to salsa are also some of my most heavily used).
Tomatillo Salsa!
Feb. 4th, 2021 05:05 amI made myself some tomatillo salsa yesterday and am now enjoying it with some tortilla chips. I used tomatillo, heirloom tomatoes, onion, lemon juice, hot sauce, smoked paprika, and garlic powder and blended them all together. I cooked everything except the tomatoes beforehand and chilled it in the fridge.
