I made some fresh tomatillo salsa which I put on my refried bean tacos. I quite like it! I was very lazy about the salsa because I didn't want to chop so many vegetables, so I only chopped up some fresh tomatillos and an anaheim pepper and put them in my blender with some lemon juice and then refrigerated it for a while before using it on my tacos. So nothing very fancy, but it's nice to have it fresh.
