Earlier I made vegan orange chicken using a premade tvp (textured vegetable protein) chicken that I breaded and made sauce for. I love just eating this stuff by itself on rice. Getting something like this premade to be gluten free *and* vegan is practically impossible even if I still went to restaurants. They just...nearly never bread food that's gluten free and vegan. Someone evil decided this. Still, it's pretty straightforward to make myself, if somewhat time consuming. But sometimes devoting time to things is worth it--especially if there is food involved.

Walnut Marzipan
I am indeed enjoying my walnut marzipan. I used this recipe but with almond extract instead or rum. I did try a bit of it without the almond extract, but decided I'd like a touch of almond flavor.
Walnut Marzipan
Ingredients
- 1-1/2 cups California walnuts
- 1 cup powdered sugar
- 1 teaspoon dark rum
- 1/4 teaspoon salt
Directions
- Place walnuts in a food processor and mix until finely ground.
- Add powdered sugar, rum and salt. Mix until combined.
- Add cold water, 1/2 teaspoon at a time, until the mixture comes together and forms a crumbly dough.
- Turn marzipan out onto a surface, sprinkled with a bit of powdered sugar, and use your hands to press crumbs into a log.
- Wrap in plastic wrap and store in a dark and cool place until ready to use.

Here's a photo I took of this walnut marzipan I made recently. The coloring is just food coloring I added for fun. And yes, I do have a unicorn mold. That is an essential kitchen tool. Essential.
