Thanks! I agree, squash is very satisfying. Definitely one of the things I look forward to in the fall. I really enjoyed how the squash blended with the potato and parsnip as well. It was just an 'I guess I'd better use this stuff before it goes bad' soup, but I absolutely loved it and am looking forward to eating the leftovers as well!
