Barbecue Jackfruit Sandwiches!

Finished the barbecue jackfruit I made last night this morning. I love making barbecue jackfruit sandwiches.  Love that shredded texture the jackfruit just naturally has.  And the texture of the unripe seeds.  It's so amazing how great jackfruit is in savory foods when unripe and how deliciously sweet it is when ripe.  I like to keep cans of unripe jackfruit and jars of barbecue sauce in my pantry for this, so it's pretty easy to make, too.  I always marinate the jackfruit in the barbecue sauce beforehand to make sure the flavor gets properly absorbed.
