Last night I prepared the last of my gluten free falafel mix. It was delicious, but I wanted to know how I could make more falafel in the future even if I can't get a gluten free mix so I looked up how to make it from scratch and it...actually doesn't look too bad? So I'm planning to get some canned chickpeas and make some more with those.

Date: 2020-05-26 11:21 pm (UTC)*I am not going to really weigh in on which (chickpeas are easier for me admittedly), but I've run across a neo traditional recipe that uses part lima beans with this method and their cyanogenic glycosides make me nervous about that. (I am also not the biggest lima bean fan, though I suspect I'd think they were fine in combination with something else using my usual method.)

It's possible the extended soaking leeches the toxins out, but regardless I don't like to take chances with beans that are known to have high concentrations of toxins and I would probably also feel more comfortable cooking them first.
