Falafel

Last night I prepared the last of my gluten free falafel mix.  It was delicious, but I wanted to know how I could make more falafel in the future even if I can't get a gluten free mix so I looked up how to make it from scratch and it...actually doesn't look too bad?  So I'm planning to get some canned chickpeas and make some more with those.

It's my understanding that the most traditional falafel are A) made from chickpeas and/or fava beans* that have been soaked a long while but not cooked and B) are deep fried (and spherical!), but I usually use a not so traditional recipe of baked patties made with cooked or canned chickpeas

*I am not going to really weigh in on which (chickpeas are easier for me admittedly), but I've run across a neo traditional recipe that uses part lima beans with this method and their cyanogenic glycosides make me nervous about that. (I am also not the biggest lima bean fan, though I suspect I'd think they were fine in combination with something else using my usual method.)
