I made falafel patties with Kite Hill non-dairy yogurt dill sauce for dinner and that was great.  This was my first time using canned chickpeas and fresh shallots, garlic, and cilantro with spices to make falafel instead of using a dried package mix.  Even though I made the mix mushy rather than gritty as it specifies (I used my blender to blend it because I got lazy lol), it came out delicious.  I baked the falafel patties for about 15 min per side, 30 min total at 400 F.  It's nice that I don't have to rely on boxed mixes for falafel anymore, and I really like how fresh this falafel tastes.

Sounds delicious! I love falafel but I've never tried baking it. Usually I try to bake rather than fry because I don't love my apartment smelling like hot oil, but falafel always seemed like one of those things that needed to be done the old-fashioned way, so it's good to know that it works in the oven.
