Empanadas: An Attempt Was Made

Last night I attempted to make gluten-free empanadas with some vegan chorizo crumbles.  The dough did not come out well, but I did my best to shape my crumbly dough into empanadas anyway.  I don't blame the dough recipe--I think it was my tiredness and inexperience with pastry dough that both contributed to the failure.  Which I still ate.  Because after going through so much effort I wasn't going to just toss it.  They looked hideous, but tasted acceptable to me, though not great.  The filling helped make up for the mediocre taste of my pastry dough, though.  I hope I can get a chance to get better at this kind of stuff. I really like things like empanadas and samosas, but I have almost no experience with pastry dough, and I'm also trying to make it vegan and gluten-free, which means all the recipes require an annoying amount of precision. Though I've done well with precision recipes before!  But I really think my tiredness impacted the result because it caused me to rush through things faster than I usually would.

I hope to try more pastry stuff later because I want to get better at that sort of thing, and I really like pastries and want more of them in my life.  Then I could make, like, empanadas and samosas and pies and hot pockets.  The sky's the limit!

But in the short term, I'll try something easier, haha.  Maybe it's time for more chili...

...you might look into corn/masa based empanada doughs, at least for compatible filings? I actually haven't ever made empanadas with any dough, but I had one with a corny shell a few weeks back that was pretty good (minus my quibble with the filing: I'd prefer that rajas con queso consist of more than 2 (though one was quite large) pepper strips), and there might be some more established gluten-free dough techniques there.

That's a good idea! Some recipes with corn flour or meal also require wheat, but there's a number of gluten-free options there as well. It's definitely worth checking out.

Looking at some recipes, it definitely seems like corn-based empanadas are the way to go. The dough looks much simpler to make.
