I wonder how many different Star Wars books (and tv shows, and comics...) exist. I only know the answer is 'way more than I'm ever likely to get around to reading' but beyond that I just don't even know.
I've actually read a fair number of the books from both the old and new canon, though by no means anywhere near all of them. Weirdly enough, I have more difficulty reading comic book series than regular book series. I've read relatively few of the comics.
I just read whatever looks interesting to me. A lot of people like to start of with the Thrawn novels (which also have accompanying comics if you prefer that format). There's a different Thrawn series for both the old and new canon, written by the same author. But if those aren't your interest, it's not a requirement to read them or anything.
I used to decide what books to read based on their cover art. I don't do that anymore, but I do look for characters or plot descriptions I'm interested in reading about.
