I absolutely love this potato-sunchoke soup I made last night, despite using absolutely no salt.  I used the following ingredients:

-potatoes

-sunchokes

-1 garlic bulb

-garlic powder

-unsweetened plain soy milk

-half-sharp hungarian paprika

I washed the potatoes and suchokes carefully to get all the dirt off them.  Had to check the sunchokes carefully because they're knobbly and so they can look really clean even when dirt is still stuck between the knobbly bits. I chopped the potatoes and sunchokes up (I found most of the dirt on the sunchokes after chopping them, so they were washed both before and after chopping). 

Then I cooked the potatoes and sunchokes in just enough water to cover them.  My goal was to avoid draining the water since it gets a lot of the flavor from the vegetables. When they were soft enough, I mashed them in the water.  I put a few spoonfuls of some garlic powder and the paprika in the pot. I poured the soy milk in. I cut up the garlic bulb (which was sprouting, so I cut the sprout up and used it too).  I sauteed the chopped garlic in olive oil.  Then I poured the sauteed garlic and olive oil in the soup.

I really enjoy potatoes in so many different forms. Earlier I cooked some by boiling and then frying them in some spices and olive oil. Which is my favorite way to eat potatoes. Baked fries are also my favorite way to eat potatoes. Also hash browns. And mashed potatoes are also my favorite way to eat potatoes...

I love homemade baked fries.  Baking uses a lot less oil than deep frying, which makes it more economical.  I know you can reuse oil, but I don't like to since that can affect both the taste and health value of the oil.  I also like to leave the potato skins on because I find them delicious and I understand they are also nutritious.  I only discard pieces of skin or potato if they're growing eyes on that part or they look otherwise off.

I made a batch of homemade baked fries last night and they came out perfectly golden brown.   Always a wonderful experience to be able to satisfy my potato craving.

One of the major differences between sweet potatoes and potatoes is that you can eat the whole sweet potato plant.  Of course potato plants have quite poisonous leaves and stems like many other members of the nightshade family.  But sweet potatoes are in the morning glory family, and happen to be completely edible.  I recently enjoyed a tofu stir fry with some larger sweet potato sprouts (one had grown to be about a foot long!) and today I am cooking the actual root portion as sweet potato fries.

Potatoes are amazing.  I am looking forward to eating this giant batch of baked fries I'm making.  No other fries quite compare for me to homemade fries baked in olive oil, garlic powder, and paprika.

So, at the beginning of this week, I made a big batch of food, and I am certainly enjoying it now.  I made:
1. smashed potatoes and sunchokes in thyme, garlic powder, and olive oil
2. barbeque tempeh with mixed vegetables mixed in (so the vegetables have barbecue sauce on them too)
3. strawberry salsa

I am very pleased with how all of those came out.  I really like being able to just microwave the barbeque tempeh and the smashed potato/sunchoke together.  Gives me the convenience of one of those commercial microwave dinners, but is more to my tastes and more filling.

I was a little uncertain about trying strawberry salsa at first since I tend to either really like fruit salsa or really not, but I was quite happy with how it came out.  I do enjoy experimenting with different salsa types.  Would like to make a peach or mango salsa at some point, but I couldn't right now since I don't have peach or mango at the moment.
