I cooked a sand pear in some water last night and enjoyed that quite a bit. I did it because I was paranoid about the small gashes in the skin, so was trying to sterilize the fruit, but I also think I actually like it even better cooked.
They have a slightly different texture and flavor, though the differences between those two aspects can be somewhat subtle. Their size and shape, on the other hand, is noticeably different, as those are similar to a large apple. They're also known as asian pears. Here's the Wikipedia page on them:
